Quinoa Salad – provided by Caryn (Serves 4)
- 1 cup quinoa
- 2 cups water, chicken broth or vegetable broth
- juice of 6 limes
- 1/4 cup olive oil
- 1 TB cumin
- 1/4 cup cilantro, chopped
- 1/4 cup flat-leaf parsley, chopped
- salt
- pepper
- 2 small zucchini, chopped
- 2/3 cup raisins
- Combine quinoa and water/broth in a medium pan. Bring to a boil,
reduce heat and simmer on low until all liquid is absorbed (about
10-15 minutes). Set aside to cool. - In a medium bowl, add lime juice, olive oil, cumin, cilantro,parsley and salt/pepper to taste. Stir with a whisk to combine.
- Mix cooled quinoa into dressing in bowl and stir until well coated. Fold in zucchini and raisins until mixed. Chill until ready to serve.
