Quinoa Salad – provided by Caryn (Serves 4)

  • 1 cup quinoa
  • 2 cups water, chicken broth or vegetable broth
  • juice of 6 limes
  • 1/4 cup olive oil
  • 1 TB cumin
  • 1/4 cup cilantro, chopped
  • 1/4 cup flat-leaf parsley, chopped
  • salt
  • pepper
  • 2 small zucchini, chopped
  • 2/3 cup raisins
  1. Combine quinoa and water/broth in a medium pan. Bring to a boil,
    reduce heat and simmer on low until all liquid is absorbed (about
    10-15 minutes). Set aside to cool.
  2. In a medium bowl, add lime juice, olive oil, cumin, cilantro,parsley and salt/pepper to taste. Stir with a whisk to combine.
  3. Mix cooled quinoa into dressing in bowl and stir until well coated. Fold in zucchini and raisins until mixed. Chill until ready to serve.
